This simple and easy salad recipe is so great for light lunches or it makes for the perfect side dish #shorts

Recipe: serves 4

1 large punnet of mixed tomatoes
1 cup of baby bocconcini
1 tablespoon extra virgin olive oil
salt & pepper to season
handful of basil leaves, torn

Mix all ingredients well in a large bowl and serve.
