RAINBOW SPRING ROLLS WITH NUOC CHAM

SPRING ROLL INGREDIENTS
1 Red bell pepper
1 Yellow bell pepper
1 Carrot
1 Cucumber
1 Purple cabbage
1 Sprig of mint
1 Sprig of cilantro
1 Tbsp butterfly pea blossoms
1 package of rice vermicelli noodles
4 large spring roll wrappers

DIRECTIONS
-Core and seed your bell peppers, then cut each into thin match sticks. Set aside, being sure to keep the colors separated
-Peel and julienne your carrot very thin. Set aside
-Thinly slice your cucumber into circles, then slice into thin matchsticks.
-Slice a portion of your cabbage into shreds until you have about ¼ cup
-Take a few leaves of cilantro and mint, and slice them. Mix in with the cucumber.
-Add your butterfly pea blossoms to a small pot of water and bring to a boil. Stir to make sure the water gets nice and blue. Add your vermicelli noodles and remove from heat. Allow this to soak for about 3 minutes
-Heat up about an inch of water in a pan large enough to fit your spring roll wrappers. The water should be safe to touch, about the temperature of a hot bath. Dredge 1 of your wrappers in the water for a few seconds, flipping it over to ensure it soaks on both sides. Place it flat on your work surface.
-Beginning with the red bell peppers in rainbow order, and line them up on your wrapper. Continue this process with the carrots, yellow peppers, and the cucumber herb mix. Then, take an equivalent amount of rice noodles and lay it down in the same fashion. Finally, place down a thin line of your purple cabbage.
-Fold the left and right sides over your veggies, then fold up the bottom. Roll everything up
-Repeat the process for the 3 remaining spring roll wrappers.

NUOC CHAM
½ c warm water
3 Tbsp lime juice
2 Tbsp granulated sugar
2 tsp vinegar
3 Tbsp fish sauce
2 Tbsp carrot, julienned
1 clove garlic, minced

DIRECTIONS
-Stir together the warm water, lime juice, and sugar until the sugar is dissolved
-Add in the remaining ingredients, adjusting to your preferred taste
