Ok, so Khao Kluk Kapi (ข้าวคลุกกะปิ) is common in Thailand, but at the same time it can be hard to find at restaurants. It's more of a Thai dish that's served as takeaway from markets and shops around Bangkok, but it's rarely served as a sit down meal or at street stalls. The reason, I'm actually not so sure, because it's truly one of the world's greatest dishes. But there are a few streets stall in Bangkok serving Khao Kluk Kapi (ข้าวคลุกกะปิ), one of them located pretty close to Khao San road, known as Khao Kluk Kapi Niyngow (ข้าวคลุกกะปินายหง่าว).
So the dish begins with rice, but it's not just plain rice, it's rice that's first stir fried up with some kaphi, or fermented shrimp paste. This doesn't over power the rice, but simply gives it a nice shrimp flavor without it being overpowering. The next step is to add the variety of fresh and cooked ingredients on to the top of the rice. The is the assembling process, and though it's simple, so many places get it wrong. The main issue is to ensure that the ingredients are fresh and go well together. Khao kluk kapi (ข้าวคลุกกะปิ) toppings include sour green mango, string beans, cucumber, shallots, dry shrimp, sweetened pork, Chinese sausage, slices of an egg omelet, both roasted and fresh chilies, and finally a squeeze of lime to complete the spectrum of flavors.
So khao kluk kapi (ข้าวคลุกกะปิ) is one of my all-time favorite Thai dishes mainly because it includes such a diversity of fresh ingredients on a single plate. It's such an explosion of extremes in every single bite.
