Soft Tofu Stew with Seafood
Soft Tofu with Seafood is made with refreshing shrimp, squid, and mussels!
Soft, white tofu mingles together with the deep taste of seafood.
■ main ingredients
300g soft tofu, 6 shrimps, 1/2 squid, 7 mussels
Minor Ingredients
1 onion, 1 green chili pepper, 1 red chili pepper, 1 leek, 1 zucchini, black olves, 1 button mushroom, 2 garlic, 1/2TS salt, 2TS soy sauce, 1TS vinegar, 2TS olive oil, sesame oil, pepper
■ Recipe
1. Wash shrimp, squid, and mussels. Chop the squid into bite-sized pieces.
2. Slice onions, peppers, and garlic. Chop the leek and zucchini.
3. Boil shrimp, squid, and mussels in water.
4. Add tofu and boil, then add onions.
5. Season with salt, pepper, and diced garic.
6. Add red and green peppers and leek.
[Soft Tofu with Black Olives]
1. Chop tofu in 3-4 cm pieces.
2. Parboil tofu in salt water for 2 minutes.
3. Stir-fry garlic in a oiled pan, and add chopped shiitake mushrooms, onions, and black olives.
4. Mix 2 spoons of soy sauce, 2 spoons of olive oil, 1 spoon of vinegar, and a bit of sesame oil to make the sauce.
5. Top the tofu with vegetables, and pour sauce on top.
Dumplings
Mandu, dumplings are made by steaming, boiling, or pan-frying meat and vegetables wrapped in a flour skin. It can also be used to make soup, or added to rice cake soup.
■ Ingredients
360ml flour (3 cups), 180ml water(11/2) , 2TS salt, 150g ground beef, 300g tofu, 200g soybean sprouts, 100g chives, 2TS diced green onion, 1TS diced garlic, 1TS sesame oil, 2TS soy sauce, 2TS vinegar, 1/2 red chili powder
■ Recipe
1. Mix together three cups of flour with salt and water. Let the dough sit in a plastic ag for about 30 minutes to soften.
2. Sprinkle flour over a chopping board, and roll the dough to about 0.3 cm thickness.
3. Cut the dough with a round cutter about 7-8 cm in diameter. Stack the pieces, sprinkling flour in between to keep them from sticking.
Skip steps 1, 2, 3 if using store-bought dumpling skins
4. Season the ground beef with 1 spoon soy sauce, 1/2 spoon salt, 1/2 spoon dice garlic, and ground pepper.
5. Squeeze the water out of tofu with a paper towel, and wash and chop the chives.
6. Wash the bean sprouts, and parboil in water with a bit of salt. Dry, and chop.
7. Mix together the beef, tofu, bean sprouts, and chives together with 1 spoon diced green onions, 1/2 spoon of diced garlic, 1/2 spoon of salt, and ground pepper.
8. Place a dumpling skin on the palm and wet the edges. Place the stuffing inside, fold in half, and press the edges together. (Choose the shape you want!)
9. Place the dumplings on a pre-heated steamer.
10. Make dipping sauce with 2 spoons of soy sauce, 2 spoons of vinegar, 1 spoon of water, and 1/2 spoon of red chili powder. Serve together withh dumplings.
