Bean Sprout Soup with Rice

200g bean sprouts, 120g kimchi, 200g steamed rice.
2. Minor Ingredients
1TS diced garlic,, 25g leek, 1ts crushed dried seaweed, 2TS salted shrimp, 1 egg, 1TS chilli, 2TS perilla seeds , salt
3. dried pollack broth
1500ml water, 100g dried pollack, 100g onion, 4g pepper, 4g chili pepper, 2TS refied rice wine
■ Recipe
1. Boil water, pollack head, onions, pepper, dried chili peppers, and refined rice wine on high heat. When it boils, lower the heat, crack the lid, and simmer 20 minutes. Filter the broth through a cloth.
2. Boil and drain bean sprouts. Rinse in cold water, and drain.
3. Boil broth, kimchi, and bean sprouts together in an earthenware pot.
4. When boiled, add diced garlic and salted shrimp.
5. After a while, add crushed dried seaweed, leek, chilis, and crushed perilla seeds.
6. Add a raw egg just before serving.
7. Serve with a bowl of rice on the side.
Boiled Fish in Soy sauce
Clean white fish is enriched with soy sauce in stewed soy sauce fish.
■ Ingredients

500g external blue colored fish (ex. mackerel)
2. Minor Ingredients
60g white part of leek, 20g garlic (4 slices), 15g ginger, cooking oil
3. For seasoning
3TS soy sauce, 2TS sugar, 2TS rice alcohol, 2TS starch syrup, 1TS diced green onion, 1ts diced garlic, 1TS sesame oil, pepper, salt, 1/4 cups of water
■ Recipe
1. Choose a fresh fish. Chop off the head, tail, and fins, and peel off the scales.
2. Slice open the stomach to remove the insides. Wash and dry the fish, and chop into 5-cm pieces.
3. Chop the white roots of the leeks into 5-cm pieces.
4. Slice the onions and garlic.
5. Make the sauce by mixing in the seasoning ingredients with soy sauce.
6. Oil a pan, and grill the fish halfway over medium heat. Remove the fish.
7. Boil the sauce together with green onions, garlic, and ginger in the pan. When it starts to boil, put the fish back on, and continue pouring the sauce over the fish until the sauce grows thick.
8. Put the fish onto a plate, and pour the boiled sauce over it.

3.황태머리육수
물 1500ml, 황태머리 100g, 양파 100g, 후추 4g, 고추 4g, 정종 2큰술
■ 조리과정
1. 냄비에 물, 황태머리, 양파, 후추, 건고추, 정종을 넣고 센 불로 물이 끓기 시작하면 약불로 줄여 뚜껑을 살짝 열고 20분 정도 은근하게 우려낸 후, 국물을 면보에 받쳐 내린다.
2. 콩나물은 삶아서 건진 후 찬물에 데쳐 물기 제거하여 준비한다.
3. 뚝배기에 김치, 콩나물, 육수를 넣은 후 바글바글 끓인다.
4. 어느 정도 끓으면 다진 마늘과 새우젓을 넣는다.
5. 한소끔 끓으면 잘게 부순 김가루, 대파, 청양고추, 들깻가루를 넣는다.
6. 먹기 직전에 달걀을 깨서 넣는다.
7. 밥 한 공기를 따로 담아낸다.
