Meatloaf is a family classic - But it doesn't have to be bland and greasy. Try my version out this week :)

Ingredients: serves 6

1 cup onion, diced
1 tsp garlic, sliced finely
1/3 cup carrots, diced
1/3 cup celery, diced
1/3 cup mushrooms, diced
1 tbls red chilli (deseeded)
1 tbls rosemary
1 tbls thyme
1 tsp cayenne pepper
1/4 cup ketchup
300g Lean beef mince/ground
300g Lean Pork mince/ground
salt to season
1/2 cup fresh breadcrumbs
1/4 cup Worcester sauce
2 eggs, beaten

Glaze
1/2 cup ketchup
1 tbls american mustard
