Marinade
1 garlic clove
1 tsp bush spice seasoning
1 tbls fresh rosemary leaves
1 tbls macadamia nut oil

2 Kangaroo fillets
salt & pepper to season
2 cups baby spinach
2 cups rockets leaves / arugula
1/2 small red onion, sliced
1 red capsicum/bell pepper
1/2 cup whole macadamia nuts
1 tbls macadamia nut oil
fresh flat leaf parsley to garnish
