■ Ingredients
500g whelks
100g somen noodles
1 sprig spring onion
1 onion
5 cloves garlic
4 small pieces kelp (2cm x 3cm)
1/4 lemon
baby greens and sesame seeds

Seasoning
1/2 makgeolli (Korean rice wine)
3 tbsp gochujang (Korean red chili paste)
2 tsp vinegar
2 tsp sugar
1 tsp sesame seeds
1 tsp sesame oil
1/2 clove garlic, chopped

400g pork belly
coarse salt, pepper, olive oil, and parsley
1/2 apple
1 tbsp honey
2 tbsp white wine
olive oil and salt (as needed)
1 tsp pine nuts (optional)
80g sweet pumpkin
4 spears asparagus
1 oyster mushroom
1 head lettuce
1 head romaine
1 bundle perilla leaves

Sauce
2 tbsp doenjang (Korean soybean paste)
2 tbsp gochujang (Korean red chili paste)
1 tbsp maesil (green plum) syrup or honey
2 tsp garlic, minced
2 sprigs chives
10ml sesame oil
sesame seeds and nuts (walnuts, peanuts, and sunflower seeds)
