ungjung Tteokbokki Pasta (Rice Cakes and Pasta with Soy Sauce)
Tteokbokki is one of the most popular Korean snacks made with rice cakes. Normally, tteokbokki comes in red chili sauce--which can be too spicy for foreign palates. Chef Lee offers a sweeter version known as "Gungjung Tteokbokki" made with soy sauce, beef, and broccoli. What's more, he gives his tteokbokki a western twist by adding pasta.
■ Ingredients
1 head broccoli
200g rice cakes (cut for tteokbokki)
200g pasta
200g beef, thinly sliced
1 tbsp sesame seeds
2 sprigs spring onion

Sauce
3 1/2 tbsp soy sauce
1 1/2 tbsp honey
1/4 onion
1/2 tbsp sesame oil
1/2 tbsp sesame seeds
1/2 tbsp garlic, minced
1 kiwi
pepper


Caramel Galbijjim (Beef Short Ribs)
Steamed beef short ribs called "Galbijjim" in Korean is a dish prepared for special occasions such as wedding banquets and holiday feasts. Chef Seri shares her know-how on making gorgeous galbijiim the simple way.
■ Ingredients
1kg beef short ribs

Sauce
150ml soy sauce
5 tbsp sugar
2 tbsp maesil (green plum juice) or honey
3 tbsp garlic, minced
5 tbsp sesame oil
3 tbsp sesame seeds, crushed
1 green onion
1/4 pear
900ml water
pepper
Spices
1/4 onion
1 stalk leek
3 cloves garlic
5 peppercorns
100g radish
5g ginger
2 cinnamon sticks

Garnish
5 shiitake mushrooms
200g radish
100g carrot
small handful of walnuts, ginkgo nuts, dates, and pine nuts
2-3 tbsp sugar (optional)
