Excellent cutting skills, or “knife skills”, are prerequisites of a master chef. This episode of “#LocalGourmets and #YoungChefs” features the winner of #KnifeSkills Category at the Young Chef Chinese Culinary Competition 2023, Ng Yuen-tak. He showcases his award-winning techniques, peeling a mud carp with its skin and head intact in just a few minutes. He also demonstrates how to slice a tofu into the shape of a chrysanthemum, which is a very difficult task indeed.
